My co-worker, Alberto, asked me if I’d like to make a birthday cake for his daughter’s 3rd birthday celebration. He showed me a picture of a cake with Elza doll standing on top of it, and he would provide me with the doll. He asked this 2 weeks before the occasion while confirming with his wife, so that gave me enough time to fulfill my travel plan to experience foliage at the Great Smoky Mountains.
Alberto finally confirmed after I returned, which means I had 5 days to prepare. During my day off on Thursday, I started making the simple syrup and frosting. I made the cakes on Friday, then I assembled and decorated it on Saturday. I used snow candies instead of royal icing to make the snow. I wish again for more time, but I was very happy with the result.
Having experienced working with fondant, covering this cake was smoother than all of my previous cakes. As I handed the cake to Alberto on Saturday night, I feel like letting go of something precious I just created. I was a little sad, but I’m sure it will cheer Itzel up…
