It’s finally here. I’d been thinking about this day for months when my parents-in-law said they would visit us. I browsed ideas about mini cakes, went through my ingredients, and finally decided to make a simple mini cake that looks pretty.

Inspired by pictures on my magazines, and my limited time, I came up with a 6 inches round cake wrapped with white gift-wrap paper, then tied with pearls and red ribbons around it, with 2 red heart papers hanging on two sides. One side says “Happy Birthday Helena”, and the other side says “Happy Anniversary Helena & Eric”.

Yes, this was my mother-in-law’s birthday and also their anniversary.

The cake is a four layer chocolate cake and milk chocolate frosting with Italian meringue buttercream frosting for the crumb coats. The best part about this cake is I used all organic ingredients and grass-fed butter. Mami-Papi love the cake, which is the testimony of good ingredients make the best cakes.
