My only reason to make this cake, was because I’m not a big fan of banana bread. I tried to make banana bread and I tried to like it, but it just wasn’t for me. So, I did my research on what can I make if I like chocolate and have overripe bananas. And the picture of Chocolate Bundt Cake in the internet looked oh so pretty, so I decided to make Chocolate Banana Bundt Cake.
Let’s start by gathering all the ingredients, as shown in the picture above. The very first step is to melt the butter with water and cocoa powder in the pot, apply medium heat until it form a homogeneous mixture of chocolate liquid.
In the big bowl: mix the rest of the dry ingredients: flour, brown sugar, baking powder, baking soda, and salt.
Pour the chocolate liquid to the mixed flour in the big bowl slowly while stirring with a butter knife, mix them until they’re blended.
Then mix in the rest of the wet ingredients: mashed bananas, mayonnaise, eggs and vanilla. Stir with butter knife, spatula and a whisk.
Finally: add the chocolate chips, then stir them with the butter knife. Next, grease the Bundt cake pan with butter.
Pour the cake batter in the greased Bundt cake pan. Pour them until the last drop, never waste a cake batter. Then let the oven does its magic at 350⁰ F. for 40 minutes.
After 40 minutes, the oven would give birth to this beautiful cake. Just like everything in life, please be patient for 10 minutes. Let it cool.
When it’s time to reveal the beauty of this cake, I would put a larger plate on top, then flip it upside down, and voila: here it is. Remember to always use oven mitt when holding the cake pan to flip the cake, in order to avoid burning your hands.
As with any cake, it’s only nice to share it with everyone while enjoying hot teas in the afternoon.
Chocolate Banana Bundt Cake Recipe:
8 ounces grass-fed unsalted butter
½ cup organic cocoa powder
1 cup water
10 ounces organic all purpose flour
15 ounces light brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 medium mashed ripe organic bananas
½ cup organic mayonnaise at room temperature
3 large organic eggs at room temperature
2 teaspoons pure vanilla extract
½ cup non gmo semi sweet chocolate chips
